~ ~ What You'll Need ~ ~
125g (4.5oz) Soft Butter
1 1/2 Cup Sugar
1 Teaspoon Vanilla Essence
1 Cup Mashed Overrip Banana
2 Cups Flour
2 Teaspoons Baking Powder
1/4 Teaspoon Bicarb Soda
1/4 Teaspoon Salt
2 Tablespoons Milk
2 Small Loaves
Preheat your oven to 180ºC (350ºF) Grease two 15x25cm (6x10inches) loaf pans, line base with baking paper.
Beat butter and sugar in a small bowl with an electric mixer until light and fluffy. Beat in eggs one at a time until combined. Transfer mixture to a large bowl.
Add vanilla essence and fold in banana mash. Stir in half the dry ingredients and half the milk, then stir in remaining flour and milk.
Spread mixture into your prepared baking tin. Bake between 50-60 minutes.
Loaf will keep up to three days in an air tight container, or can be frozen up to three months.
Add half a cup of finely chopping nuts to mixture before baking.
